Grape Origin: b> The Syrah comes from our vineyards that are organically grown in Minies Kefalonia. The yield per hectare does not exceed 400 kg / ha, and the soils are calcareous.
Vinification: b> All procedures performed on the family winemaking winery Kosmetatou Marianas. The grapes are separated from the bunches and broken berries are fermented in open tanks. The juice is recycled so the skins always remain moist. When the desired extraction of color and tannins, (about 15 days), the stafylomaza pressed juice is passed in a closed stainless steel tanks to complete the alcoholic and the malolactic fermentation. Then the wine is transferred into 2 Ermitage French oak barrels for maturation. After the 18-month stay of wine barrels wine is bottled unfiltered. The bottles remain for further matured for at least 6 months in underground cellars mas.
