Another jewel in the crown of greek sweet wines that placed Greece on the global radar. A great attempt by the estate to give us a Vinsanto, accompanied by a twist on the traditional style of wine and took eight years to get in the bottle. Assyrtiko is supplemented with a little Athiri and Aidani, the grapes are dried for 10-15 days under the hot sun of Santorini, they are 'pressed' during midday hours to more easily extract the concentrated, sugary, juice and then ferment for several months before moving to the big black-old wooden casks to age.
