With a different approach to the raw material, the pomace of the beloved Assyrtiko from the wineries of Chios was used as a base, after its vinification through the process used for producing natural wines and specifically 'orange wines'. This added secondary aromas to the aromatic profile of the pomace beyond the typical ones of the variety.

The result is a tsipouro with a distinctive character. Aromas of baguette and white bread dough, chlorophyll from broken fresh green beans, while the secondary aromas have an oily character that brings forth notes of clarified butter, Kythira barley bread, and corn grissini, giving a syrupy flavor. In the aftertaste, citrus notes dominate, with grapefruit, mandarin, and blood orange alternating roles on the palate.
Ideal with seafood, fried fish, preserves, vegetable fritters, salads, greens, and fresh cheese.
