- Producer's Description
- Since 1994, our company has been producing 2 of the most renowned wines of the island in Santorini. The THALASSITIS and the THALASSITIS BARREL. For the production of these wines, we employ the most modern technology and expertise so that, through them, the Assyrtiko from the vineyards of Episkopi, Akrotiri, and Pyrgos can express its character to the fullest potential. One of the winemaking techniques applied is the use of selected strains of yeast, a technique that ensures character stability and repeatability of the final result, within the always defined frameworks set by each vintage. For the ASSYRTIKO of GAIA – Wild Ferment, our approach was slightly different. The carefully selected Assyrtiko for its ripeness and health comes exclusively from the "mountainous" vineyard of Pyrgos, which makes it a bit more aromatic than the Assyrtiko from the rest of the island. This Assyrtiko, after undergoing a twelve-hour pre-fermentation extraction phase at about 10 °C, will be racked and will go into both small refrigerated INOX tanks of 1,000 liters and into new French oak barrels of 225 liters. There, we will simply allow the temperature to rise on its own without any further intervention from us. Essentially, from this point onwards, modern expertise hands over the baton to traditional winemaking... The alcoholic fermentation will start and develop on its own very, very slowly. The strains of yeast that will prevail will largely determine the character of the new wine. In each tank and in each barrel, something different – in terms of yeast – will happen. In some cases, we may not like the result. In the end, we will select for you only those tanks and barrels that we believe elevate the Assyrtiko to new heights of enjoyment. The "bad" (or "good" for some) aspect of this "uncertainty" in the production of the ASSYRTIKO of GAIA – Wild Ferment may lie in the fact that every year we are "forced" to discover a new dimension of this truly multifaceted variety, the Assyrtiko of Santorini. One peculiarity of most Assyrtikos from Santorini is that, while they are white wines, they have the "behavior" of reds! Try aging the ASSYRTIKO of GAIA for 2-3 years, strictly at a temperature that never exceeds 12 – 14 °C. The wine will change profoundly. Its metallic dimension will recede while aromas of fruit and honey will dress its body. Finally, remember to decant your ASSYRTIKO of GAIA (new or aged) in a wide carafe about half an hour before enjoying it. Its new dimension will excite you…!

Αποτυχία στο value for money.
