- Winemaking for the Thymiopoulos family began in 2000, applying different cultivation practices depending on the microclimate and the year, along with corresponding experimental winemaking, to discover the potential of each vineyard and how it should be treated. In 2004, bottled wine from the family-owned winery was released for the first time. Aging takes place in oak barrels in the winery's underground cellar, while the fresh wine is left for nearly 10 months on the lees.
