Producer's Description: Varietal Composition: 100% Xinomavro. Region: ‘Skantzochoiros’ viticultural zone of Amyntaio. Vineyard: Linear owned vineyard of 650 acres at an altitude of 620 - 710 m. The vineyard plot ‘Skantzochoiros,’ which is located within the unified ownership vineyard, is at an altitude of 690 meters, with a northern orientation, overlooking the ‘Petra’ lake and Mount ‘Voras’. Soil: Sandy - clayey with excellent drainage. Climate: Semi-continental with significant snowfall and warm, dry summers with cool nights. Frequent appearance of northwestern winds, absence of spring frost. Yield: 430 kg per acre. Winemaking: Pre-fermentation extraction in an inert environment, alcoholic fermentation at controlled temperature, and aging of the wine for eight months on its lees with periodic stirring. Aging: Initially aged for nine months in selected French oak barrels of medium porosity with ‘white’ toasting and then for fourteen months in the bottle before market release. Organoleptic Characteristics: Deep red color. Complex bouquet with characteristic aromas of flowers and spices (vanilla, pepper, clove), with tones of ripe raspberry, sun-dried tomato, and skin notes. Full-bodied palate, with vanilla aroma, rich structure, balanced acidity, and notes of well-crafted barrel, leaving an intense aroma of quinces on the finish. Tasting Harmony: At room temperature, it pairs excellently with juicy grilled meats and sausages, roasted red peppers, rabbit stew, meat pies, and rustic pies in general. Braised beef or pork, mature spicy cheeses, oven-roasted lamb. International cuisines with spices (Indian, Chinese). It is recommended to decant it into a special carafe.
