Its color is light lemon-green. Aromatically, it features citrus notes with an emphasis on lemon, grapefruit, and orange peels, followed by hints of peach and pear, and finally some mineral and tea notes. On the palate, it is particularly complex and balanced with very high acidity, prominent mineral elements, and a lemony finish. It is one of those wines that can evolve for at least a decade.

The vineyard of the Bishopric, from where the grapes for this rare wine originate, is the oldest in Santorini. The estate's own vineyards, called Monsignori, are over 200 years old, cultivated with mules, and the fruit they yield expresses the island's terroir in a unique way. The sharp acidity, lemony profile, and wonderful mineral character rank it among the island's top wines. On the label, we see the old canava of the Argyris family from 1800.
