Ktima Theodorakakou is synonymous with the vineyard of Laconia. It vinifies local varieties from the area, paying attention to low yields per acre, cultivates its vineyards using organic methods, and produces exceptional wines. Producer's Description: Varietal composition: Mavroudi 80%, Agiorgitiko 20%. Organic wine: Certification by DHI. Production process: Harvesting in early October for both varieties from a specific part of the vineyard selected for the production of this wine. Winemaking involves extraction for 18-22 hours, fermentation at a low temperature of 14°C of the must that comes out without any pressure (free run). Stopping fermentation at the desired point, aging on fine lees for a short time and bottling. Organoleptic characteristics: Shiny rose color, intense aromatic bouquet, with characteristic aromas of rose, cherry, and bubblegum. Rich sweet and sour taste, silky tannins, and refreshing sweetness. Flavor harmony: Served at 9-11°C. Pairs with dishes of Asian and Mexican cuisine, sweet and sour pork with fresh vegetables, spicy chicken. Pasta with seafood such as lobster spaghetti, and stews with red sauce. Variety of cold cuts and sweet cheeses, fruit salads while also served excellently as an aperitif.
