Organic Assyrtiko from the vineyards of Ktima Matsa and collaborating vineyards in Central Greece. The climate is warm and Mediterranean, while the age of the vines ranges from 5 to 25 years.

Selective manual harvesting and sorting in the vineyard. The grapes are cooled to 10 °C before being transported to the press, where strict sorting follows. Fermentation takes place in stainless steel tanks at 16 °C. The wine then remains on its fine lees with gentle stirring for at least 4 months. Bright lemon-green color. The nose reveals aromas of white flowers, bergamot, pear with white flesh, and subtle mineral notes. On the palate, it is full-bodied, with a pronounced earthy character and balanced, refreshing acidity. Long aftertaste.
