In the Vardali area of Domokos, Vaios Gkanis showcases the aging potential of Roditis Alepou through a low-intervention organic and vegan white wine. The 19-year-old vines are cultivated exclusively according to the principles of Organic Farming. 80% of the wine matures for about 10 months in 3rd and 4th use oak barrels, while the remaining 20% stays in a stainless steel tank. This is followed by a bottle aging of 6 months, adding complexity and structure.
