It consists of two of the most famous Greek grape varieties. Assyrtiko (90%) from the Aegean islands and Xinomavro (10%), the renowned grape from Northern Greece. The wine, after fermenting with spontaneous indigenous yeasts from the vineyard, undergoes malolactic fermentation and ages for 6 months in new and second-use French oak barrels along with the fine lees. It is then bottled unfiltered, to preserve all its characteristics.

On the nose, high-intensity aromas of citrus, melon, and pear, with aromas of lemon blossom. Honey and smoke in the background express the very subtle oak. After the first year of aging, distinct benzoin aromas and minerality emerge. The time spent in barrels along with the fine lees makes it full-bodied and oily. Pleasingly dry with refreshing acidity, with white-fleshed fruits like melon, peach, and pear standing out, followed by citrus. The very long finish leaves a fruity sensation in the mouth that lingers.
