A recipe that, in combination with the unique aromatic herbs of Lesbos and the star anise from Lisvori, creates the most beloved ouzo on the island and throughout Greece, Ouzo Mini Mytilini.
In the traditional copper stills of the EPOM distillery, the alcohol and water solution, the seeds, the aromatic herbs, and the island's plants remain for hours, along with the famous star anise from Lisvori and the unique mastiha from Chios. Then, the mixture is distilled slowly and carefully, with continuous checks and tastings. From the distillation, the "heart" or "unadulterated" part is selected, which is the final distillate with a pure aroma and rich flavor, after the "head" and "tail" are removed.
Before the "unadulterated" or "heart" reaches the bottles, it is diluted with soft water from the best springs of Lesbos, so that Ouzo Mini Mytilini attains the desired alcohol content.
