North of the bottling facilities in Vergèze lies the «Garrigues de Nîmes», made of limestone rocks from the Mesozoic era, which over the centuries have cracked, allowing the circulation of water. These limestone rocks were originally covered with Plaisancian marls from the Tertiary period and subsequently by alluvial deposits from the Quaternary period, consisting of infiltrative siliceous sand. This sand was later covered by an impermeable layer of clay, ensuring even today the absolute protection of the PERRIER water reserve. The carbon dioxide, formed either from volcanic activity or from the removal of carbon from the limestone, travels underground through the fissures that have been created. The carbon dioxide reaches the impermeable layer of marl, where it gets trapped. Due to the fissures in the marl layer, just above the PERRIER spring, the gas creates a passage and emerges at the surface, gushing at this point, in the location known as «les Bouillens». This is how PERRIER is created, a perfectly natural carbonated mineral water, enriched with the gas from its source!!! In fact, to ensure a consistent bubble content (~50 million bubbles per liter!), the carbon dioxide is collected separately from the source and then added to the water during the bottling process.
