Septem Monday’s Pilsner is produced by the addition of whole hops from the Northern Brewer and Perle varieties. Fermentation occurs at a stable controlled temperature of about 9-11 degrees and is followed by maturation at low temperatures for about 6 weeks. It is served ready in our glass at 4-6 degrees. This unique Greek Pilsner is crafted by the microbrewery Septem located in Chalcida and by chemist-oenologist Sophocles Panagiotou. The name Septem in Latin means seven, and its choice is not random. The seven days of creation and the seven days of the week should each have their own distinctive flavor. This is the philosophy of the modern microbrewery that pays great attention to the raw materials, particularly the hops, the facilities, and the biodynamics.
