- "Thalassitis" is produced from Assyrtiko, the traditional white grape variety of Santorini. It is perhaps the only variety in the Mediterranean region that manages to combine the satisfactory ripeness of the grapes with a relatively high acidity under these climatic conditions, a characteristic that is particularly important for the tasting balance of dry white wines. The Assyrtiko chosen for "Thalassitis" comes exclusively from the ungrafted vineyards of Episkopi, Akrotiri, and Pyrgos. The average age of these vineyards is estimated to be around 70 to 80 years. The particularly low yield per hectare, which rarely exceeds 350 kg (26hl/ha), combined with the soil and the variety, produces a wine that is abundant, nervy, and has a strong personality. "Thalassitis" is best expressed during a meal, particularly with seafood, fish, and shellfish, as well as lemony lamb. Generally, it pairs well with flavors of moderate aromatic intensity where salty, sour, or fatty elements dominate. A peculiar characteristic of most Assyrtiko from Santorini is that, although they are white wines, they have a “red wine behavior”! Try to age your "Thalassitis" for 2-3 years, strictly at a temperature that never exceeds 12-14 °C. "Thalassitis" will change. Its mineral dimension will recede while aromas of fruit and honey will envelop its body. Finally, remember to decant your "Thalassitis" (either the young or the aged) into a broad decanter about half an hour before you enjoy it. You will be amazed…!
