Producer's Description Source: The vineyards of Rapsani located on the western slopes of Olympus, at an altitude of 300-600 meters, all within the legislated zone Protected Designation of Origin Rapsani. Depending on the altitude, topography, orientation, tilt and mechanical composition of the soil, the vine-growing and winemaking techniques adapted to highlight the potential of each vineyard selection of Rapsani or selected Rapsanis.

Vinification: co-vinification of three native varieties. The winemaking process is focused on the long pre-fermentation extraction combined with vigorous aeration for full exploitation of phenolic and aromatic potential of synopoiimenon poikilion.
Aging: is held for 6 months in French oak barrels with 60% new synthesis barrel burning of forests Micrococcus porosity and 40% barrels of second and third year. Here reductive aging in the bottle for at least 6 months prior to its release to the agora.
Character: Deep red color with ruby ​​highlights. Complex bouquet of fruity (blackcurrant, blackberry, cherry) and distinctive plant characters (olive and tomato paste) varieties complexing a woven aromas and flavors with hints of spice and vanilla. In the mouth, elegant, distinguished by soft tannins, characteristic acidity and ripe body which enable harmony with traditional dishes of Greek cuisine directly placed on the agora.
Serving Suggestions: Serve at 18 ° C and integrated with the region pies, cooked meats, game, stews, and mature Spetsofai tyria.
