Medium lemon with golden highlights and thick tears in the glass. Absolutely dry, with wonderful structure and the "alla" Chablis acidity of the wine to give rigor and nerve, but at the same time to balance the ripeness of the fruit and the alcohol. A wine that has clarity and purity of expression, a Santorini that you cannot confuse with anything else. Drink it now or give it 5 years of aging in the cellar before consuming.
