Its color is light gold with several green highlights. Its aroma is complex, with citrus like lemon and grapefruit and mineral elements dominating followed by peach and almond notes. In the mouth it is rich with the characteristic crisp acidity creating waves of freshness, appreciable saltiness, some honeyed touches make their appearance, while the aftertaste has an incredible duration. Undoubtedly a 'big' white wine that has the structure to evolve for at least a decade.
Skytali is a special wine that marks the passing of the winery of Haridimos Hatzidakis to his children. A wine whose vinification of the first year of release was started by Haridimos himself and reached the 'finish' by the young talented people who continue his work. This is a limited production wine that clearly captures the philosophy of this great winemaker and the style of 'Santorini' that he loved. It matured on its lees for 12 months acquiring an extremely complex character, which develops even more as it remains in the bottle. The label sketch is designed by his daughter, Stella Hatzidakis.
