The Anhydrous by Apostolos Mountrichas brings a new look to the performance of the majestic terroir of Santorini. Its unique talents, created by the earth, the volcano and the sea breeze are exceptionally reflected, with the fruit meeting the smoky minerality and the incredible levels of acidity under a solid structure.
Assyrtiko, but also the small percentage from Aidani and Athiri, give an amazing wine that ferments with the native yeasts. Its color is medium lemon, while on the nose there is a nice synergy between the crystal clear variety fruit (peach, lemon) and a smoky mineral (flintstone). Classic Santorini, featuring a very strict mouth, with acidity that pinches our salivary glands, while balancing fantastically with the thickness and structure of the wine in the mouth. All of its elements promise a great aging potential. Enjoy it now or keep it for 5-6 years to see how it evolves.
