Dark brown with green reflections in the glass due to the long period of maturity in the barrel. Full sophisticated aromas of dried fruits such as figs and raisins, chocolate and hints of strong oxidation such as caramel, toffee and nuts. Vineyard: Zone Mavrodaphne Patras AOC (north and northwest of Patras), and Achaia prefecture respectively.
Harvest: Late August and early September for Mavrodaphne. Second fortnight of August for the Black currants.
Aging: At least 48 months in French oak barrels (225litra).
vinification method: According to the traditional way of fortified sweet wine. Separate vinification for each variety and stopping the alcoholic fermentation with the addition of wine alcohol. So the sweetness of the wine Mavrodaphne exclusively due to sugars of the grapes, while the bouquet combines the flavors of the grapes with those of partial fermentation and aging.
