Dry, Still, Red, Cabernet Sauvignon, Syrah, Ages well, 14.5% alc.
Deep red on the face while in the glass unfolds aromas of black fruits and spices, typical of Syrah. The presence of the barrel very discreetly embraces the aromatic ensemble, offering a balanced wine with a very good structure. The mouth follows aromatically, with rich black fruit and volume in a balanced harmony of the two varieties, which give a long aftertaste. It goes well with a plate of cheeses such as brie or gruyere for 5 months, barbeque with slightly spicy sauces or even a juicy burger.
21 years ago, the Kyr-Giannis Estate was released for the first time in the Greek market in Paraga. One of my favorite labels introduced many wine lovers to quality bottled wine. Paraga Revolution, harvest 2019, is released in a limited number of bottles, as an anniversary product for ’21, a historic year for Greece.

Producer Kir Yiannis
Producer's Description Wine Shack combines the Xinomavro, Merlot and Syrah. The color is bright red, while the bouquet is complex and reminiscent of raspberry with hints of green pepper. Total with a light taste, volume, round character, but also dominant acidity that ensures long-lasting aftertaste. Mild tanikotita mouth gives the impression of a beautiful carved somatos.
Xinomavro from mountain vineyards Amynteo, while the Merlot and Syrah from select vineyards in the Prefecture of Florina. The vineyards are growing zone Amyndeo, at 600 -700 meters The area is ideal for producing wines with great finesse and rich aroma thanks to the poor and sandy soils, but also the microclimate with cold winters and hot summers, which is softened by the four lakes that surround it.
Human intervention in the vineyard level focuses on two areas: the increase, where necessary, the useful leaf area through new and Supporting small and frequent watering in the maturation phase, when required or time, to avoid water stress. O target is the blend of varieties, in addition to strong expression of typical fragrance, to have a complete phenolic orimansi.
Apply skin contact extraction unbroken grape, at 12 ° C and in the presence of inert gas, the length of which varies between 2-5 days depending on the quality of raw material. The fermentation temperature is 20-22 ° C. The quality of phenolic ripening of raw materials, especially of pips, that determines the duration of grape marc with (the more immature the shorter the stay). To balance the high acidity of Xinomavro, we seek to increase the oiliness batonnage with light lees 2 times a week for the quarter January - March. The blend is no evolution in oak barrel, only to pools, but where we aim to reproduce the environment of the barrel through the application mikrooxygonoseon. The malolactic fermentation is done deliberately in only 50% of the volume of the blend for the beginning of Spring. This wine is bottled and calms the bottle for 1-2 mines.
