Producer's Description Microclimate: Continental. During the winter we have a lot of rain and snow. Summer is cool with several storms. The above climate helps both the slow maturation of the grapes while maintaining the sharpness and in very good phenolic maturation.
Vinification: Ekragismos - pressing and extraction for 22 days. During the fermentation are 2-3 wettings day. The fermentation temperature is between 20 and 25 degrees and immediately after the extraction is guided wine matured in French oak barrels of 300 liters (Alliers Chauffe Legere - Chauffe Moyen) where it remains on the lees for two months at least 3 Battonage week .
