Vinification: Fermentation in French oak barrels and aging of wine on the lees for about 6 months (method "sur lies").

Sensory data : Bright golden color, with a distinctive presence of wood in a citrus. With balanced flavor and rich, refreshing acidity that gives a great finish with a distinctive minerality, typical of the variety, at best. Aging potential: Over 7 years old.

Serving: Fish and white meats with spicy white sauce, smoked cheese and smoked salmon at 12 ° C.

Vineyard Location: Santorini, Oia, Imerovigli (in the northern part of the island).

Territory: consists of fragments of black lava, volcanic ash and pumice (pumice). From its mechanical labeled "gritty". It is poor in organic matter and nitrogen, with minimal clay and a negligible content of CaCo 3 .

Η Σαντορίνη του κτήματος Σιγάλα είναι ένα διεθνώς καθιερωμένο πλέον λευκό ξηρό κρασί. Ο πολύς Robert Parker το έχει πλέον κατατάξει στα εξαιρετικά, δίνοντάς του βαθμολογία 90-95 -μιά αναγνώριση σπάνια για ελληνικό κρασί. Η Σαντορίνη του 2008 βραβεύτηκε ήδη με το μεγάλο Χρυσό βραβείο του Διεθνούς Διαγωνισμού Θεσσαλονίκης.

Είναι ένα κρασί με γεύση Σαντορίνης, με αρώματα Σαντορίνης, ένα κρασί που απεικονίζει με ακρίβεια το σπάνιο terroir του μοναδικού ελληνικού νησιού: Αρώματα λεμονιάς, εσπεριδοειδών, η γνήσια μυρωδιά του θηραικού ηφαιστιογενούς εδάφους, χρώμα αχυρόξανθο με πρασινωπές ανταύγειες, άριστη οξύτητα που φέρνει μπροστά τα αρώματα και προσθέτει φρασκάδα, και μιά επιγευση που διαρκεί όσο και αλλάζει δυναμικά μέχρι το σβήσιμό της. Ένα σπάνιο κρασί που θα σας θυμίζει την γοητευτική Σαντορίνη για περισσότερο από 5 χρόνια, επιβεβαιώνοντας τη διάρκεια του Ασύρτικου της Σαντορίνης στον χρόνο.

Συνοδεύει άριστα θαλασσινά, ψάρια στη σχάρα, αλλά και για τους τολμηρούς της γεύσης λευκά, ελαφρά κρέατα πουλερικών. Σερβίρεται στους 10-11 °C.

Η δική μας βαθμολογία:
Απαραίτητο κόσμημα στο κελάρι σας. Παύλος Γκέγκας - Οινοκριτικός Βαθύ λεμονί. Μεγάλος χρόνος δαμαστής και την τρίτη μέρα ανοιχτό, έδιωξε το παχύ βαρέλι γιά να εξορύξει ορυκτή κάπνα και τσακμακόπετρα, κίτρινα άνθη, ώριμα πυρηνόκαρπα και εσπεριδοειδή, ελαφριά αύρα πικάντικων βοτάνων, ιώδιο και ανοιχτόχρωμα μπαχάρια. Σφιχτοδεμένη καπνική και θειώδης πνεύση, αβαντάρει το φρούτο στο πυκνό, γεμάτο σώμα. Ψητά μπαχάρια και ξερά spicy βότανα, καψαλισμένη πορτοκαλόφλουδα, ώριμα ερυθρωπά εσπεριδοειδή και πυρηνόκαρπα με αλκοολική θέρμη να συμπλέει με την τονισμένη οξύτητα, χαράζουν με flinty εκδορές τον ουρανίσκο. Μακρά, μπαχαρένια, ιδιαίτερα αλκοολική, με υψηλή εκχυλισιμότητα επίγευση, μολυβένια ορυκτή αυτήν την φορά, με τις φαινόλες και το αλκοόλ να συναγωνίζονται και να στέλνουν αγωνιώδες σήμα γιά μη πρόωρο άνοιγμα της φιάλης. Όχι γιά εύθραυστα, ντελικάτα ψάρια. Μεγάλα ''μαύρα'' στα κάρβουνα, καπνιστή λευκή ντόπια μελιτζάνα με κύβους μοσχαριού, τυλιχτό με βότανα και τυριά ψαρονέφρι, κατσικάκι φούρνου. Τηγανητές τσακώνικες μελιτζάνες και κολοκυθάκια με πιπεριές, με κόκκινη σκορδάτη σάλτσα, στραπατσάδα με Μανιάτικο λουκάνικο. 2018-2027 14,5% 45€ (1,5 lt) 91+

From the importer: "Minerality is evident, as a result of Santorini's unique terroir. Quite 'austere' as wine, with the acidity being the back-bone of the wine, allowing it to age. Petrol notes and honey-suckle appear in aged Assyrtikos, similar to the German and Alsatian Rieslings. Typical, white wine vinification techniques, in stainless steel tanks, under controlled temperature. A certified organically farmed vineyard on the island of Santorini, Sigalas is producing some of the most sought after white wines in Greece. These intensely aromatic whites, based on the indigenous Assirtiko grape, are grown in the volcanic soils of Santorini, consisting of cinders, rust, lava and pumice stone. These wines have excellent structure, good acidity and a long, full flavoured finish. With a unique growing method, whereby the vines are trained into a cylindrical shape, the fruit ripens gently within the basket to protect it from the strong ocean winds. High humidity at night allows for just enough moisture intake for the grapes to develop and the soil structure and lack of nutrients ensure distinct minerality in the wines."
The 2012 is packed with alcohol at 14.3% - the 2011 is more subtle at 13%
