George Gavalas next to Assyrtiko devotes much of his effort to reviving forgotten varieties of the Thera vineyard that in the last century exceeded 100 on the island of Santorini. One of them, Voudomato offers a rare rosé wine with distinctive fruity characteristics, cool acidity and mineral elements in the nose and mouth.

Assyrtiko is supplemented with a little Athiri and Aidani, the grapes are dried for 10-15 days under the hot sun of Santorini, they are 'pressed' during midday hours to more easily extract the concentrated, sugary, juice and then ferment for several months before moving to the big black-old wooden casks to age. The result is a mind-blowingly sweet wine with flavors and aromas that remain unforgettable for months.

The large wooden barrels that were traditionally used in Santorini were called Αfoura. This exceptional Santorini expression of Anhydrous, signed by Apostolos Mountrihas, has matured in such barrels.
