    Assyrtiko is supplemented with a little Athiri and Aidani, the grapes are dried for 10-15 days under the hot sun of Santorini, they are 'pressed' during midday hours to more easily extract the concentrated, sugary, juice and then ferment for several months before moving to the big black-old wooden casks to age. The result is a mind-blowingly sweet wine with flavors and aromas that remain unforgettable for months.

    It is known that Syrah is the favorite and multi-awarded variety of Avantis Estate. For the sweet Princess, the most mountainous part of the vineyard was used with a particularly costly and difficult vinification method. Towards the end of the grape harvest, the harvesters pass by and slightly crush the stems of the grapes, causing them to gradually overconcentrate sugars and flavour! A Syrah in the superlative degree. Place it next to a Black Forest cake or a rich bitter chocolate for an unforgettable experience.
