Assyrtiko is supplemented with a little Athiri and Aidani, the grapes are dried for 10-15 days under the hot sun of Santorini, they are 'pressed' during midday hours to more easily extract the concentrated, sugary, juice and then ferment for several months before moving to the big black-old wooden casks to age. The result is a mind-blowingly sweet wine with flavors and aromas that remain unforgettable for months.

The large wooden barrels that were traditionally used in Santorini were called Αfoura. This exceptional Santorini expression of Anhydrous, signed by Apostolos Mountrihas, has matured in such barrels. Rare wine from the Argyrou Estate produced from strictly selected Assyrtiko vineyards over 150 years old that are cultivated in the area of ​​Pyrgos according to the principles of biodynamic cultivation.
