It is an expression of the variety that should be enjoyed by the fans of Assyrtiko but also by those who do not particularly like it because they will change their mind.

The Agricultural Community of Paros makes wine with knowledge and a willingness to experiment with native varieties, redefining their true potential. In the case of Monemvasia, the bet of PDO Paros classification is won by a wine with an intensely fruity character and a balanced palette, which manages to artfully assimilate the mineral and brackish identity of the island.

Assyrtiko is very well expressed in the land of Laconia, producing a more extroverted lemonade but also a mildly floral character, while at the same time combining the high acidity and the earthy notes of the variety.
