Thalassitis is a wine with a long and steady course, which perfectly combines the formality and authenticity of Santorini's Assyrtikos with the modern character of a wine with an international profile. For this version, the head winemaker Yannis Paraskevopoulos decided to mature eache bottle under the depths of the santorinian sea. Only a few bottles survived from the deep sea submergion. The perfect ageing environment (steady and healthy temperature, humidity and absence of light) created a wine of iconic quality worthy of any wine collection.
