    Assyrtiko is supplemented with a little Athiri and Aidani, the grapes are dried for 10-15 days under the hot sun of Santorini, they are 'pressed' during midday hours to more easily extract the concentrated, sugary, juice and then ferment for several months before moving to the big black-old wooden casks to age. The result is a mind-blowingly sweet wine with flavors and aromas that remain unforgettable for months.

The wonderful Katsano of Giorgos Gavalas, a multi-year and persistent effort of the winemaker has given the wine of the same name a wonderful yellow color, aromas of honey and lemon but also of apricot, matching acidity and a long, very pleasant aftertaste.
