    Its color is light lemon. Its aroma is full of life with fresh green fruits such as apple and pear, citrus, peach and essential notes of white flowers.     Two local winemakers, Manolis Vavoulas and Nikos Gryllis, put Lipsi on the wine map of Greece when in 2013 they joined forces and created the Lipsi winery with the aim of producing wines that match and highlight their place. Here we have a white wine from three predominantly Aegean varieties, the red Fokiano (followed by white vinification) and the white Assyrtiko and Athiri, which stands out both for its charming fruity profile and its cool and delicious taste.

    Haridimos Hatzidakis intervenes to a minimum extent , this wine of very limited production , trying to capture as much as more clearly what Santorini earth can give. Grapes organic , indigenous yeasts , minimal intervention philosophy of the winery and a wonderful expression of the uniqueness of the terroir of the island .
