Forget it for a few years in your cellar. The result will be particularly complex creating a perfect "comfort" wine.

Gentle nose full of minerality and the characteristic, for Assyrtiko of Santorini, flint. Notes of ripe stone fruit and tart citrus. Mouth rich, exuberant with finesse and razor sharp acidity. Long aftertaste with saltiness and minerality. Decanting into a carafe is recommended to allow the wine to breathe and open up in order to bring out its complex character.
