Thalassitis is a wine with a long and steady course, which perfectly combines the formality and authenticity of Santorini's Assyrtikos with the modern character of a wine with an international profile. For this version, the head winemaker Yannis Paraskevopoulos decided to mature eache bottle under the depths of the santorinian sea. Only a few bottles survived from the deep sea submergion. The perfect ageing environment (steady and healthy temperature, humidity and absence of light) created a wine of iconic quality worthy of any wine collection. You may uncork it now and enjoy the gifts of the aegean sea in all their youth, or (if patient) after some years to unfurl the magic of Assyrtiko.
