Overripe grapes from Assyrtiko, Aidani and Athiri, from vineyards over 200 years old, are strictly selected in the Episkopi area and dried under the hot Santorini sun for about ten days. After fermentation, the wine matures for 3 years in concrete tanks, then ages for 4 years in old oak casks. Its color is light brown. Its aroma combines ripe but also fresh elements and is reminiscent of dried and jammed fruits such as figs, orange peels, honey, chocolate, herbs and nuts. Incredibly delicious with acidity that does not let the sweetness monopolize and finishes with a beautiful honey aftertaste. It could age for many more years and gain even more complexity, although it is ready to be enjoyed now.
