And we have the hard-core acidity of Santorini Assyrtikos to thank, which makes this dessert wine so balanced and paradoxically light. It is usually served chilled. We recommend it almost frozen. Along with a chocolate souffle or a very salty cheese. This wine can quite possibly age forever and continue to get better year after year.
