Wonderful expression of Assyrtiko from the unique terroir of Santorini with the signature of Gaia, a pioneer producer of the island. The fruit comes from a rare century-old vineyard, which has given the wine a shocking taste depth, complexity and nerve. It is definitely one of the top whites, not only in Santorini but in all of Europe.
Complex aromas of citrus such as bergamot and lemon, fine mineral dimension, honeycomb and notes of white fruit. In the mouth it has a solid structure, and razor sharp acidity, with noticeable oiliness from the maturation of 15 months on the fine lees, while the resting of a small part of the wine in oak barrels adds even more flavour complexity. It is a wine that has the structure and aromatic concentration to evolve for several years in the bottle.
