George Gavalas next to Assyrtiko devotes much of his effort to reviving forgotten varieties of the Thera vineyard that in the last century exceeded 100 on the island of Santorini. One of them, Voudomato offers a rare rosé wine with distinctive fruity characteristics, cool acidity and mineral elements in the nose and mouth.

Those who are not yet convinced that Xinomavro, apart from exceptional red wines, also gives us great rosé wines, should try the "Dianthos", bearing the signature of the Boutari winery, a company that has tied its name with Naoussa and the most important red variety of Northern Greece. The myth says that Dianthos is the flower created by Zeus because he envied the lily, the flower of Hera. Elegant, vivid but also modern, Boutari's flower gives us endless moments of enjoyment.

A wonderful and 'dobro' rosé wine from Tinos, where two rare red varieties are masterfully combined, Mavrotragano and Augoustiatis, giving us generous notes of coolness and fruity flavors. The wine comes from vineyards at an altitude of 400 - 450 meters, with low acreage yields, ferments with native yeasts and matures on its mud for two months acquiring an unusually philosophical character for rosé wine!
