Palyvos Estate tackles Kydonitsa giving a new dynamic and predictably enjoyable dimension to the variety. The use of native yeasts, the excellent fruit of selected vineyards and the soft touch of oak from the 4-month stay of the wine in french and american barrels gives a wine ready for all taste matchings.

Mostly Chardonnay and an idea of the local Vidiano differentiates Instinct white which has been barel fermented for about four months. The less aromatic Chardonnay gives its richness and depth to the blend, while the Vidiano provides a floral dimension and white-fleshed fruit.
