Walking in trackless, almost unexplored paths, since rarely encountered as Aidani varietal wine, the feeling that every corner of the Greek vineyard offers opportunities for great winemaking discoveries. Featuring some of the oryktotita of Assyrtiko, plant cues, and generous amounts of fruit, makes us wonder what other surprises may hold the magical terroir of Santorini.

Chloe Hadjivaryti, a young talented winemaker puts her stamp on the new wines of the homonymous winery, which are vinified with minimal interventions. Ni is one of the three organic ‘natural approach’ wines of the minimus series. A combination of Assyrtikos and Roditis that are kneaded with the native doughs in clay amphorae, in contact with the marcs and are bottled without clarification and filtration. An ‘orange’ type wine with very nice ripe fruit and rich mouth.

The terroir of Santorini is present in all the varieties of the island! The wonderful Katsano of Giorgos Gavalas, a multi-year and persistent effort of the winemaker has given the wine of the same name a wonderful yellow color, aromas of honey and lemon but also of apricot, matching acidity and a long, very pleasant aftertaste.
