George Gavalas next to Assyrtiko devotes much of his effort to reviving forgotten varieties of the Thera vineyard that in the last century exceeded 100 on the island of Santorini. The terroir of Santorini is present in all the varieties of the island! The wonderful Katsano of Giorgos Gavalas, a multi-year and persistent effort of the winemaker has given the wine of the same name a wonderful yellow color, aromas of honey and lemon but also of apricot, matching acidity and a long, very pleasant aftertaste.
