    Hetero Wines, created by Maria Tamiolaki and Dimitris Mansolas, describes its effort as ‘Gypsy Winemaking’, ie it produces wines in different regions of Greece that have been selected for their uniqueness and wine value. Here we have an amazing Assyrtiko from vineyards that are organically grown in Domokos, which ferments with the native yeasts, remains for 5 months with its fine lees as 50% of the wine enters oak barrels of second use. It very nicely combines the austerity of the variety with its friendliest characteristics when grown outside Santorini.

    The top Chardonnay vineyards of Navarino Vineyards, with extremely low yields, grape give a qualitative as who "craves" a separate bottling. Very careful aging few months in French oak and limited contact with the lees are techniques used to give extra dimensions but not over-the fruit. The Kotyle Chardonnay is a wine that can be safely stored for five years after harvest.

    An ‘orange’ and ‘natural’ wine from Roditi with the signature of Nikos Karatzas, which raises the bar of wines of this style very high. The grapes come from old vineyards and are picked bit by bit. The fermentation is done with the native doughs in a clay amphora and the juice ferments and remains with the marcs for 30 days, acquiring a deep color but also rich and intensely aromatic and tasty characteristics. It then matures for 6 months with the wine sludge in the amphorae. No additions are made, while all work is done manually. This is an exciting gastronomic wine and definitely a suggestion that will make you love wines of this style.

If you try it with your eyes closed, you are very likely to feel the saltiness of the Aegean and the wild beauty of the windswept vines of beautiful Santorini. Even the most 'simple' label of Hatzidakis winery, made from 100% Assyrtiko, is a great wine that can age for many years.
