Assyrtiko is supplemented with a little Athiri and Aidani, the grapes are dried for 10-15 days under the hot sun of Santorini, they are 'pressed' during midday hours to more easily extract the concentrated, sugary, juice and then ferment for several months before moving to the big black-old wooden casks to age.
