Assyrtiko is supplemented with a little Athiri and Aidani, the grapes are dried for 10-15 days under the hot sun of Santorini, they are 'pressed' during midday hours to more easily extract the concentrated, sugary, juice and then ferment for several months before moving to the big black-old wooden casks to age. The result is a mind-blowingly sweet wine with flavors and aromas that remain unforgettable for months.

George Gavalas next to Assyrtiko devotes much of his effort to reviving forgotten varieties of the Thera vineyard that in the last century exceeded 100 on the island of Santorini.
