Assyrtiko is the white variety that tends to become the "flagship" of greek wine abroad. Thalassitis, one of the leading labels of Santorini's Assyrtiko, which bears the signature of John Paraskevopoulos and GAIAS Winery has a loyal audience that appreciates the perfect expression of Assyrtiko's power and dynamics.

The large wooden barrels that were traditionally used in Santorini were called Αfoura. This exceptional Santorini expression of Anhydrous, signed by Apostolos Mountrihas, has matured in such barrels. Having acquired a mature and complex character and capturing with great precision the special characteristics of the island, it has already won a place among the great Santorinian Wines.

Αrgyros Estate is one of the top wineries, not only in Santorini but in all of Europe, with a century-long tradition in the cultivation and vinification of Assyrtiko. The Assyrtiko of Argyros is a 'calm' force among the Assyrtikos of the island, with excellent balance and an impressive but also extremely pleasant acidity that, like the aftertaste, does not want to end. Its color is light gold with several green highlights. Its aroma is complex, with citrus like lemon and grapefruit and mineral elements dominating followed by peach and almond notes. In the mouth it is rich with the characteristic crisp acidity creating waves of freshness, appreciable saltiness, some honeyed touches make their appearance, while the aftertaste has an incredible duration. Undoubtedly a 'big' white wine that has the structure to evolve for at least a decade.
