This Asyrtiko is vinified only with the wild yeasts of the grapes (hence the term "Wild Ferment" on the bottle), to capture the authenticity and formality of Santorini PDO to a 100%. A fine Santorini of limited production that Assyrtiko fans should definitely try.

The large wooden barrels that were traditionally used in Santorini were called Αfoura. This exceptional Santorini expression of Anhydrous, signed by Apostolos Mountrihas, has matured in such barrels. Having acquired a mature and complex character and capturing with great precision the special characteristics of the island, it has already won a place among the great Santorinian Wines.

A white wine made for the summer greek table. The lemony minerality of Assyrtiko acquires smoky notes from the oak barrel and elevates any summer seafood dish grilled over coals.

Its color is light gold with several green highlights. Its aroma is complex, with citrus like lemon and grapefruit and mineral elements dominating followed by peach and almond notes. In the mouth it is rich with the characteristic crisp acidity creating waves of freshness, appreciable saltiness, some honeyed touches make their appearance, while the aftertaste has an incredible duration. Undoubtedly a 'big' white wine that has the structure to evolve for at least a decade.

Gentle nose full of minerality and the characteristic, for Assyrtiko of Santorini, flint. Notes of ripe stone fruit and tart citrus. Mouth rich, exuberant with finesse and razor sharp acidity. Long aftertaste with saltiness and minerality. Decanting into a carafe is recommended to allow the wine to breathe and open up in order to bring out its complex character.

After Epanomi, Kavala and Ilia, Vangelis Gerovasileiou and Vassilis Tsaktsarlis arrive in Santorini where they meet the oenologist Ioanna Vamvakouris and create the Mikra Thira winery, the first attempt made in Thirasia. This is a stunning wine made from 100% Assyrtiko grapes from Santorini that reflects all the characteristics of this unique terroir. Sharp acidity, structure, minerality, citrus and saltiness!

The long-awaited collaboration of Yiannis Tselepos with the Chrysos family brings to the shelves of House of Wine a typical expression of Santorini's Assyrtikos, with purity of fruit, zesty acidity but at the same time rich in the mouth. A wine which, right from the start, aims very high and "promises" great development possibilities in the bottle.

The Anhydrous by Apostolos Mountrichas brings a new look to the performance of the majestic terroir of Santorini. Its unique talents, created by the earth, the volcano and the sea breeze are exceptionally reflected, with the fruit meeting the smoky minerality and the incredible levels of acidity under a solid structure.

Kavalieros is one of the purest expressions of Santorini's Assyrtiko. Harvested from a single vineyard that was often referred as of superior quality when comparing it with other vineyards in Santorini it ages for 18 months of the fine lees. It effortlessly brings the raw vocanic terroir to our glasses.
